Best Bruschetta

1 french baguette, cut into 1/2 inch slices
olive oil
2 large tomatoes, coarsely chopped
1/2 sweet onion, chopped
2 tablespoons olive oil
1 teaspoon finely chopped garlic
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh basil
2 teaspoons chopped fresh parsley
1/4 cup freshly grated Parmesan cheese
Directions:
Heat a pan or griddle on medium hot. Sprinkle olive oil on both sides of each piece and bread and grill until browned. You can do this in the oven on broil if you wish. In a medium bowl, combine tomatoes, onion, olive oil, oregano,garlic, basil and parsley. Place bread on a serving tray, and top with tomato mixture. Sprinkle with Parmesan.
