Chris' Herbed Cod



The spinach and parsley were plucked from my garden. Enjoy this tasty healthy meal and serve with brown rice.


1/2 cup + 1 tablespoon butter

1 lemon, juiced

½ cup panko bread crumbs

1 cup fresh Italian parsley

1 teaspoon salt

1/2 teaspoon ground black pepper

6 (4 ounce) fillets cod

 

Preheat oven to 350 degrees F (175 degrees C).

Melt the1/2 cup butter in a medium saucepan over medium heat. Mix in lemon juice Bring to a boil. Cook and stir until thickened.

Put the bread crumbs, parsley and tablespoon butter in food processor. Pulse until small crumbles occur.

Arrange cod fillets in a single layer in a shallow pan. Cover with the butter mixture, and sprinkle with the crumb mixture.

Bake 15 to 20 minutes in the preheated oven, until fish is easily flaked with a fork.
