Cocoa Spice Pork Loin with Blueberry Reduction

The blue potatoes are steamed until tender, cut in half and tossed with butter, garlic, and
fresh chopped rosemary and parsley. Salt and pepper.
Cocoa Spice Rub:
1 tablespoon Pepper
1 tablespoon ground coriander
4 1/2 tablespoons ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon ground cloves
3 1/2 tablespoons unsweetened cocoa
4 tablespoons sea salt or kosher salt
Rub generously over pork and either grill or sear and cook in oven until 145 degrees. Wrap in foil and rest meat.
Blueberry Reduction:
1 cup blueberries
2 tablespoons water
1 tablespoon aged balsamic vinegar
simmer blueberries and water until the berries release their juices. Strain and return to pot, add the vinegar and reduce until thick as syrup.
